Now I have a niche review site that I am building and to get the exact match domain I would have to get a .org but if I bung the word "reviews" on the end I can get a .com. However search volume for the reviews version is much lower. So which should I go for??

Tim Colling: +Tim Quin ;My advice: go for the .com TLD. ;It seems to me that using the .org one is not appropriate for a commercial site.

bharat thakare: Agree with +Tim Colling ;. I would also like to add that you should not worry much about the domain extension as long as the website is adding value to the end user and is meant for "humans" :)
Rotimi Orimoloye: besides, often times you tell a lot of not-so-tech-savvy "humans" that your site is at bond007(.)net but some of them still somehow end up typing bond007(.).com! ;
It's almost like a reflex action. :)
