Will sharing NAP negatively affect my SEO?

  It wouldn`t share same name.
  It would share address.
  I think I would get a different telephone number, just so I could track where my lead is coming from.
  I would plan to share email address but could change that to its own

  There`s next to zero chance that GMB will consider a second business using the same email address and phone number as another as legit separate GMB business. Even sharing the same address can lead to all kinds of confusion in GMB - layer in a shared phone and email and you`re pretty much guaranteed to have significant issues, if not outright suspension.
  
  From what you`ve outlined, the second setup doesn`t qualify for its own GMB profile. Trying to fake it into one will either result in an algorithmic issue or a complaint from a competitor getting it removed. Not worth it, IMO.

  Is this a new service ? - add to your current site and GMB makes sense unless you are thinking of doing this to shove in a keyword or two ?

  My current GMB page had "plumbing, heating and gas" in the title
  
  I`m looking to create a website which is purely boilers with just boilers in the title. The title of the website and GMB page would be completely different from the first GMB.
  
  I just wanted to maximise the SEO potential by having its own GMB page etc.
  
  I could make it so that it only shares the same address. But I didn`t want to do this and then get penalised
