You do not need to regard search console data as absolute or complete. It is not all of your data, it is simply a representative sample. Also search console is not high on the list of Google priorities. Data often goes missing. I would put it down to a glitch and ignore it. The best way to be sure that at least some of your pages are indexed is to use the site: operator. Another way is to view your actual server logs.
