What else do we need to do?

We are ready to point our real domain to our newly redesigned site that has a temp URL right now.I have gone through the old websites` sitemap and I have a list of where I will 301 redirect the url`s to on the new site.After we point the main URL to the redesigned site and set up the 301`s and submit a new sitemap to google search console what else do we need to do? What else do we need to do?
