How to make product markup up-to-date?

Hi Everyone, Recently I am working with my e-commerce client, and realized that their price, aggregated rating etc. changed constantly. If I generate json-ld markup for them, the structured data won`t be accurate anymore once they change their information on the page. How do I make sure their structured data will automatically change upon page information changing? Is using microformat the better way in this situation? or is there a way to generate server-side rendering json-ld markup dynamically querying on-page elements?
